Recipe of the Week: Perfect Peanut Butter Cookies

These cookies are just right - a bit crunchy on the outside, soft in the middle - a perfect combination. I like that I ALWAYS have all these ingredients on hand.

Perfect Peanut Butter Cookies

Ingredients:

1 1/4 c creamy peanut butter
1 c margarine
3/4 c white sugar
3/4 c packed brown sugar
2 eggs
1/2 t vanilla
2 1/4 c all-purpose flour
1 t baking powder
1 t baking soda

Directions:

1. preheat the oven to 375 degrees.
2. In a large bowl, cream together the peanut butter, margarine, brown sugar and white sugar. Beat in the eggs and vanilla. Combine the flour, baking powder and baking soda; stir into the PB mixture. Form the dough into walnut sized balls and place them two inches apart onto the ungreased cookie sheets. Dip a fork into flour and criss-cross each cookie to flatten slightly.
3. Bake for 11-13 minutes in the preheated oven, until just lightly browned. Allow the cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
