Best Carrot Cake Ever Ever Ever


This is SO good! It got the seal of approval from Poppi. 'Nuf said. Enjoy.

Ingredients:

1 1/4 c veg oil
4 eggs
1 c white sugar
1 c brown sugar
3 t vanilla
2 c flour
2 t baking soda
2 t baking powder
1/2 t salt
3 t ground cinnamon
3 c grated carrots
1 c chopped pecans
1 8 oz. can crushed pineapple (squeeze out MOST of the juice)

Preheat oven to 350. Grease and flour 9 x 13 pan.

Beat together eggs, oil, sugars, and 2 t vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.

Bake for about 45 min or until toothpick inserted in the center comes out clean. Let cool.

FROSTING:
1/2 c butter, softened
8 oz cream cheese, softened
3 1/2 - c confectioners sugar
1 t vanilla
1/4 t nutmeg

Combine all ingredients. Beat until smooth and creamy. Frost the cooled cake.

I have been searching for a good carrot cake recipe, this one looks wonderful. I will be making this soon.
